A clever home cook has shared how she made miniature lemon meringue pies using her three litre slow cooker from Kmart.

Peta, from Queensland, posted photos to the Aussie Slow Cooker Recipes Facebook group where she revealed the simple recipe alongside photos of her tasty creations.

‘Lemon curd in the slow cooker today – so tasty and so easy to make,’ she wrote.

To make the dessert, Peta used lemon zest, lemon juice, eggs, butter and sugar and combined them together before placing in the slow cooker. 

Once the butter melted she turned the kitchen gadget on low and stirred every 15 minutes for a total of 90 minutes.  

Peta then scooped the lemon mixture into pre-made tart shells bought from Coles and topped with meringue. 

‘Oh wow! Thanks for this recipe. I’m going to give it a go!’ one woman said online.

‘Looks so delicious!’ another said, a third added: ‘Great for a snack and the kids would love these.’  

Other home cooks said they opt to use slow cookers when preparing desserts or meals because the helpful kitchen gadget reduces the risk of burning the food.

It also creates less lumps and the ‘hands off’ functionality is preferred.

HOW TO MAKE MINI LEMON MERINGUE PIES IN A SLOW COOKER 

INGREDIENTS:  

3-4 teaspoons of lemon zest

1 cup of freshly squeezed lemon juice

8 eggs light beaten

200 grams butter

1 and 1/2 cups sugar 

Pre-made tart shells 

Meringue 

METHOD: 

Place all ingredients in slow cooker on high

Once butter is melted turn to low and place tea towel under lid

Stir every 15 minutes 

Cook for 90 minutes

Let the mixture cool before adding into the pre-made tart shells 

Add the meringue on top
