Sophie Monk and Joshua Gross confirmed their engagement on January 15, after weeks of rumours he’d secretly proposed.
And to celebrate the announcement, the Love Island Australia host and her fiancé grace the cover of this weekend’s Stellar magazine, which aptly hits newsstands on Valentine’s Day.
‘I’ve always believed in my Cinderella story… I just thought Cinderella was younger than 41!’ Sophie is quoted as saying on the cover, which was inspired by a famous scene in romantic film The Notebook.

In the interview, Sophie said she had learned to love herself completely before finding happiness with neurological robotics consultant Josh.
‘I had a great life. I travelled a lot, I worked hard and I thought if love is what I have to sacrifice, then maybe I’ll do my own thing and be happy,’ she said.
But when she met Josh on a long-haul flight from Europe in 2018, everything fell into place.

‘It was literally when the penny dropped that I was good, that I met Josh – I think you just have to be comfy in yourself, and that’s when the right thing comes along,’ she said.
Just like Rachel McAdams and Ryan Gosling’s characters in The Notebook, Sophie gazes into her partner’s eyes as he lifts her up in the pouring rain for the cover shoot.
She wore a pretty blue dress as she wrapped her legs around Joshua, and placed her hand on the side of his face while showing off her $50,000 engagement ring.

Joshua looked handsome in a white T-shirt which showed off his bulging biceps.
Sophie had announced their engagement via Instagram on January 15, sharing a gorgeous photo of herself cuddling up to her fiancé.
‘Told you I’d tell you guys first. I’m engaged,’ she wrote in the caption.

‘I honestly can’t thank you enough for all the love and support. I know I have the coolest people following me and you’ve always had my back and I feel so cared about,’ she added.
‘You’re absolute bloody legends. I’m not very good at being mushy. I’m trying to say I absolutely adore you. @joshuargross and I are so happy.’
The couple first met on a flight from Europe to Australia in August 2018, and shared a kiss after enjoying ‘three champagnes’ in business class.
They grew closer when Joshua helped Sophie recover after endometriosis surgery in November. Around this time, she also began the process of freezing her eggs.
