Baker shares recipe for very indulgent Nutella and marshmallow brownies

An Instagram-famous baker has left social media users ‘drooling’ over her latest indulgent recipe for marshmallow and Nutella brownies.

Eloise Head, 26, from Hampshire who goes by FitWaffle  took to Instagram this week to share her simple 10-step recipe for ‘fudgy, gooey’ brownies which have been praised as ‘delicious’ and ‘yummy’.

In a video, Eloise whips up a brownie batter with seven ingredients, before splitting it in two and adding a layer of  Nutella and marshmallow fluff in the middle.  

The self-taught chef uses unsalted butter, caster sugar, eggs, milk chocolate, plain flour, cocoa powder and salt to make the treat which has left mouths watering around the world.   

Eloise, who shot to online stardom when a baking craze swept the UK during the first Covid lockdown in spring,  uses a handheld mixer to combine the ingredients before baking for 25 minutes.

First, Eloise added 170g of melted butter and 250g of sugar to a bowl and mixed them together before she added two eggs and whisking until thick and fluffy.

After melting 125g of milk chocolate, she then added this to the butter and sugar mix. 

HOW TO MAKE NUTELLA MARSHMALLOW STUFFED BROWNIES 

 INGREDIENTS    

  • 170g unsalted butter (melted)
  • 250g caster sugar
  • 2 large eggs
  • 125g milk chocolate
  • 100g plain flour
  • 30g cocoa powder
  • 1 tsp salt
  •  300g Nutella
  •  125g Marshmallow fluff
  •  Tin size: 8×8′
  • Tip: Let the brownies cool fully in the tin. Refrigerate overnight for firmer brownies. 

METHOD  

  1. Add melted butter and caster sugar to a bowl and then whisk these together 
  2.  Add two eggs whisk until whisk and tick fluffy 
  3. Add melted chocolate and whisk 
  4. Add plain flour cocoa powder and salt to sieve and sieve in 
  5. Spoon half into baking tray
  6. Dolllop on Nutella
  7. Add marshmallow fluff
  8. Add rest of the mix 
  9. Bake 170C (fan) 25-30mins (all baking times are a guide)

As the mix was ready, Eloise then spooned half of it into a baking tray before topping with marshmallow fluff and Nutella.

Homemade desserts have surged in popularity since in the last year as people spend more time inside.

Isolation paid dividends for influencers like Eloise Head, who has amassed a combined following of 743,000 across her two Instagram accounts by sharing delicious dishes that are quick and easy to make.  

‘I have been trying different versions of brownies for the past few months and wanted to add another ingredient for an extra layer of gooeyness!’ Eloise told FEMAIL.

‘Marshmallow fluff was perfect for this and it works so well with the richness of the brownie mix. I’ve been slowly building a bank of brownies recipes and the marshmallow version is one of my favourites so far,’ she added.

Last week, BBC Good Food revealed had a record-breaking year in 2020 after millions of people were stuck at home, with an average of 3.4million UK browsers visiting BBC Food each week. 

 Figures were up 74 per cent on 2019 with millions turning to the website for ‘advice, inspiration and tips.

 Recipes for fluffy American pancakes, banana bread and Mary Berry’s scones topped the list as the most popular last year.
