An Australian dad has shared his recipe for home-made sausage rolls – after getting up early whilst his wife and kids slept to make them for special school lunches.

Stephen’s recipe calls for three kinds of meat – but also manages to pack in some vegetables to balance out the meal for his family.

‘Making food for school lunches saves heaps of time in the morning and my kids love a hot sausage roll for lunch,’ he said.

The recipe calls for beef mince, pork mince and bacon rashers as well as zucchini, onion, celery and sun dried tomatoes. 

But using vegetable to balance out the meal isn’t without its hazards.

‘They can cause the pastry to go soggy if you don’t evaporate the moisture when frying,’ he said.

And the baked goods appeared to be a hit for everyone – not just the kids and their mates at school.

HOW TO MAKE THE SAUSAGE ROLLS

 INGREDIENTS:

– Beef mince 500 grams 

– Pork mince 300 to 500 grams

– Bacon three rashers

– Zuchinni x one

– Onion x one

– Celery x three stalks

– Sundried tomatoes x 60 grams

– Borgs pastry x five sheets

– Eggs x three

– Bread crumbs x 1 cup  

STEPS: 

1. Take vegetables and bacon and fry for 15 minutes or until the bulk of the liquid evaporates. Note: The vegetables can cause the pastry to go soggy if you don’t evaporate the moisture when frying.

2. Mix pork and beef mince together with two eggs and bread crumbs. Add fried vegetables and mix together.

3. Cut sheet of pastry in half and place beef mice mix on sheet and roll. Mix the 3rd egg in a bowel and using a basting brush brush egg on edge of pastry.

4. Set oven to 160 degrees and place in oven. Remove from oven when pastry is brown and crispy.
